Grand Army is a multi-location concept in need of an experienced Chef to oversee our two kitchens and assist with expansion into another location. Our original location is a cocktail-and-Oyster bar in Downtown Brooklyn. Our second, more casual "clam shack" style concept is located within Threes Brewery in Gowanus and has a significant event/catering component. We are working on a third location and need a Chef who can manage multiple programs with calm professionalism.
Strong organizational skills, computer literacy, and the ability to oversee multiple programs is essential for this role. Our team is tight-knit, diverse, and hard working. We run things lean but are always willing to invest in what the team needs. Our ideal candidate is available for full-time employment and has the experience and skill to ensure the kitchens are set up for success each night. Very competitive rates offered based on experience with the potential for quarterly bonus/profit share for the right candidate. Health insurance stipend, paid vacation, and other perks available. Responsibilities: - Kitchen prep/working service - Ordering - Maintaining DOH compliance - BOH Scheduling - Capturing monthly inventory (foodager) - Meeting with management/ownership and events teams to evolve and craft menus both for regular service and catering/group bookings
Requirements: - 2-3 years minimum relevant experience - Experience with seafood + oyster shucking - DOH Card and demonstrated ability to secure A-grade during DOH inspections - Fluency with Craftable (Foodager), Toast and email/excel/word - Self-driven and curious. Being proactive is a must, as is the ability to maturely receive feedback and direction - Ambitious, long-term goals in the industry - Strong work ethic, sense of urgency, and responsibility; ability to maintain excellence in a fast-paced environment - High standards of cleanliness, organization, and attention to detail
