Chef de Cuisine — Osteria Radisa

Radisa is a coastal Italian restaurant in Brooklyn rooted in Adriatic and Romagnol traditions. Our cuisine emphasizes seafood, seasonal vegetables, preservation techniques, and clarity of flavor — grounded in tradition and expressed with restraint and precision.
We are seeking a Chef de Cuisine to lead daily kitchen operations and ensure consistent execution of Radisa’s culinary vision.
Position Overview
The Chef de Cuisine is the operational leader of the kitchen, responsible for day-to-day BOH execution, team leadership, and maintaining high standards during service. This role focuses on consistency, discipline, and calm, professional execution.
Key Responsibilities
Lead daily kitchen operations and service execution
Manage, train, and develop the BOH team
Oversee ordering, prep systems, scheduling, and kitchen cleanliness
Maintain consistency, discipline, and organization under pressure
Collaborate with ownership on seasonal menu evolution (not constant change)
Ensure full compliance with NYC Department of Health standards and safe food handling
Qualifications
Proven experience in serious Italian or Italian-influenced kitchens
Strong understanding of regional Italian cuisine
Demonstrated operational leadership and team management skills
Calm, focused, and execution-driven approach to service
Valid NYC DOH Food Handler License (required)
Compensation
$80,000–$90,000 annually, commensurate with experience
