i Cavallini, the sister project of The Four Horsemen, is looking for an experienced and passionate prep cook to join our team. Our restaurant opened in June of 2025 and has already been praised by many as one of the best openings of the year.
Our kitchen is led by Executive Chef Nick Curtola, of the 1 Michelin-starred The Four Horsemen in Brooklyn, and our Chef de Cuisine Ben Zook. This is an exceptional opportunity to learn and grow alongside some of the most respected names in New York City dining. At i Cavallini, we believe that successful cooks are true hospitality professionals who play a critical role in shaping the guest experience and contributing to a collaborative, high-performance culture. This starts in the morning with prep, which is the true workhorse of any successful kitchen. 
Our menu changes often and uses incredibly seasonal and pristine/high quality ingredients. We operate a kitchen that is void of machismo behavior and that fosters more inquisitive cooks and industry professionals. We treat our team with respect and ask that our cooks offer that same level of professionalism to their fellow coworkers. This in turn allows for an ego-free kitchen where cooks can learn and grow in a safe and fulfilling environment.
Our ideal candidate is someone who’s confident working on their own but knows how to jump in and collaborate when needed. Positive attitude, good energy, and a pleasant demeanor, even when under pressure, are a must.
As a Prep Cook, your responsibilities include:
-Packing away daily deliveries
-Prepping produce, meats, seafood to the specific needs of the chefs
-Making pasta daily
-Making sauces
-Working with a team to finish daily projects for service (picking herbs, portioning items, helping line cooks with knife work) as well as spearheading larger projects that can stretch out for days (sausage making, ragus, etc.)
-Helping the AM Sous Chef manage ordering

Compensation: Hourly ($20.00 - $22.00)
